Ingredients :
Pumpkin or butternut squash (sweeter)
3 tbs. flour
4 eggs
180 g. sugar
Vanilla (essence or sugar)
20 cl. Rum
Preparation :
Cut the pumpkin into pieces.
Steam cook in pressure or oven.
Mash up with whisk.
Leave it to drain in a colander for 24 hours.
Preheat oven to 200°C.
Then add eggs, sugar, flour, vanilla and a little rum.
Mix with a fork and taste: it must be sweet and well flavored.
If not, add more sugar and/or rum.
Put in a deep cake pan.
Dot with butter and cook for 1 hour.
Serve cold (refrigerated the following day).
